This seafood feast of fresh lobster and crab legs was made on the Evo Professional Wheeled Cart. The Evo Circular Cooktop is so versatile you can grill, saute, steam, roast, smoke, sear, toast, bake, simmer and even boil.

Tuna Cakes with Lemon
Salsa
Makes about twelve 2" cakes
Think crab cake - but with canned tuna.
Ingredients
CAKES:
1/2 cup panko bread crumbs
1/4 cup green onion, finely chopped
1/4 cup parsley, finely chopped
2 cloves garlic, minced
Kosher salt & fresh ground pepper
Juice of half a lemon
LEMON SALSA:
3 lemons peeled, seeded and diced small
1/4 cup red onion, diced
1/4 cup cucumber, peeled and diced small
1 red jalapeno, diced tiny
1 tablespoon extra virgin olive oil
Kosher salt & fresh ground pepper
Steps
In a large bowl combine all ingredients for the tuna cakes. Shape
into 12 cakes and cook in a medium hot pan wit olive oil until brown and crispy
on both sides.
While they cook, mix ingredients for salsa. Serve on a plate
with extra yogurt or sour cream and some salsa.

Cedar Plank Salmon Recipe for Your Evo Grill

Ingredients
Directions
No need to soak the plank, just set the salmon on the plank and
place directly on the Evo cook surface, it is that simple!
Ingredients
1 cedar plank, 1/2' thick x 8" wide x
18-24" long
1 fresh salmon filet, deboned, skin-on
2 tbsp olive oil
3-4 sprigs fresh dill, chopped
2 tsp kosher salt
1 tsp ground pepper
Directions
Place
the cedar plank on the Evo cook surface and adjust both burners to
medium. Oil the flesh side of salmon and
top it with whole sprigs of fresh dill and season with salt and pepper. Place the salmon onto the cedar plank once it
begins to smoke. Cover the cook surface with the Evo grill lid. The salmon will roast and smoke under the lid,
so do not disturb the cooking process. Allow the salmon to cook for about 20 minutes
and then check for doneness. Continue to
cook if necessary. Serve immediately.

Banh Mi Vietnamese–style Baguette Sandwiches on the Evo Grill
Chef Adam made Banh Mi Vietnamese–style baguette sandwiches today! First he grilled the beef and salmon on the Evo Circular Cooktop. Then we built our Banh Mi sandwich using fresh cilantro, julienne carrots, julienne cucumbers, sliced jalapeƱos and Adam’s Sweet Chili Sauce(recipe below).

Lunch at Verde Cocina - Made on the Evo Grill
The Portland Farmer's Market at Portland State University is now open for the 2013 season. Fresh products available for purchase included kale, carrots, potatoes onions, mushrooms, honey and pasta.

Grilled Watermelon and Tomato Salad Recipe
Ingredients
4
whole ripe heirloom tomatoes, mixed colors
4
tablespoons extra virgin olive oil
1
tablespoon fresh lemon juice
4
teaspoons aged balsamic vinegar
8
small leaves fresh opal basil
8
small leaves fresh green basil
2
tablespoons feta or goat cheese
pinch
of Kosher salt
pinch
of fresh ground pepper
Himalayan
Sea Salt, to garnish
Directions
Prepare
your Evo grill outdoors or indoors for direct grilling over high heat.
Using
a 3-1/2 inch cookie cutter, cut the watermelon flesh out of the
slices into four rounds. Place directly on the Evo cook surface. Grill on
one side only, until seared, and the melon emits a slightly caramelized aroma,
about 2 minutes. Transfer rounds, seared sides up, to a platter.
Cut
tomatoes into batons with an apple corer, or slice into wedges, cubes or slabs.
Place the tomato batons, wedges or cubes in a large bowl and toss gently with 2
tablespoons of the olive oil. Season to taste with kosher salt, pepper, and
lemon juice.
Place
a watermelon round, seared side up, in the center of each of four appetizer
plates. Top each with an equal portion of tomatoes. Drizzle each salad
with remaining olive oil, and top each with 1 teaspoon balsamic vinegar and
a sprinkle of feta or goat cheese. Garnish with opal basil and green basil and
a few grains of preferred salt, and serve.
