A delectable dinner can be ready in minutes on the Evo with these easy recipes for Tequila Lime Shrimp Skewers and Bay Scallops with a Balsamic Reduction.
TEQUILA LIME SHRIMP SKEWERS: Mix equal parts salt, chili powder, cilantro, lime zest, garlic powder, and onion powder and rub on shrimp. Place the shrimp on skewers and grill on the Evo cooktop for 2 ½ minutes, turn skewers and grill for 2 more minutes.
BAY SCALLOPS WITH A BALSAMIC REDUCTION: Season scallops with salt and pepper, sear for 2 ½ minutes on the Evo cooktop, turn scallops and sear for 2 more minutes. Serve with a balsamic reduction.
Balsamic Reduction 1 ½ cups balsamic vinegar ¼ cup of brown sugar Bring vinegar to a boil, turn down the heat and let it simmer. When it reduces halfway, add brown sugar. Simmer some more until it becomes syrupy and sticks to the back of a wooden spoon. As it cools it will thicken up.
