Evo Grill Recipe - Tequila Lime Shrimp Skewers & Bay Scallops with a Balsamic Reduction

A delectable dinner can be ready in minutes on the Evo with these easy recipes for Tequila Lime Shrimp Skewers and Bay Scallops with a Balsamic Reduction.

 TEQUILA LIME SHRIMP SKEWERS:
Mix equal parts salt, chili powder, cilantro, lime zest, garlic powder, and onion powder and rub on shrimp. Place the shrimp on skewers and grill on the Evo cooktop for 2 ½ minutes, turn skewers and grill for 2 more minutes.

BAY SCALLOPS WITH A BALSAMIC REDUCTION:
Season scallops with salt and pepper, sear for 2 ½ minutes on the Evo cooktop, turn scallops and sear for 2 more minutes. Serve with a balsamic reduction.

Balsamic Reduction
1 ½ cups balsamic vinegar
¼ cup of brown sugar
Bring vinegar to a boil, turn down the heat and let it simmer. When it reduces halfway, add brown sugar. Simmer some more until it becomes syrupy and sticks to the back of a wooden spoon. As it cools it will thicken up.

Tuna Cakes with Lemon Salsa
Makes about twelve 2" cakes
Think crab cake - but with canned tuna.

Ingredients

CAKES:
12 ounces canned tuna, drained
1/2 cup panko bread crumbs
1/4 cup green onion, finely chopped
1/4 cup parsley, finely chopped
2 cloves garlic, minced
Kosher salt & fresh ground pepper
Juice of half a lemon

LEMON SALSA:
3 lemons peeled, seeded and diced small
1/4 cup red onion, diced
1/4 cup cucumber, peeled and diced small
1 red jalapeno, diced tiny
1 tablespoon extra virgin olive oil
Kosher salt & fresh ground pepper

Steps
In a large bowl combine all ingredients for the tuna cakes. Shape into 12 cakes and cook in a medium hot pan wit olive oil until brown and crispy on both sides.

While they cook, mix ingredients for salsa. Serve on a plate with extra yogurt or sour cream and some salsa.
